    How do induction hobs work, and what pans should I use?

    Induction hobs may look similar to standard electric hobs, but they operate quite differently. Instead of using heating elements to warm up the hob surface, induction hobs use electromagnets to directly heat the cookware.

    Beneath the surface of the hob are coils that create an electromagnetic field, which induces an electrical current in any ferrous (magnetic) metal pan. This current generates heat directly in the pan, making the cooking process quicker and more efficient.

    One of the key advantages of an induction hob is that the surface remains cool to the touch, as the heat is only generated in the pan itself. This makes it safer and more energy-efficient compared to traditional hobs.

    What type of pans are suitable for induction hobs?

    To use an induction hob, you must have induction-compatible pans. These pans are made from materials containing ferrous metals, such as cast iron or some types of stainless steel. Without a magnetic material, the hob won't be able to transfer heat effectively to the pan.

    To ensure your cookware is suitable for an induction hob, look for the induction symbol, typically shown as a coil, on the base or packaging of the pan. Alternatively, you can test compatibility by placing a magnet on the bottom of the pan—if it sticks firmly, your pan is induction-ready.

    It's important to note that non-magnetic pans, such as those made from copper, aluminium, or glass, will not work on an induction hob unless they have a special magnetic base.
